Sometimes I think about how little I appreciated fall when I was younger – always waiting for summer. I suppose it’s because back then fall was the time of year that we were all really settling into being back to school which really does take some of the fun out of fall.

Thanksgiving is Coming up FAST!

With Thanks Giving coming up in just a few weeks, my mind has been pretty zeroed in on what I want to serve up for our dinner.

Typically, Jeremy takes care of the turkey – he’s just totally got that down (in fact, I should really get him to share his go-to brine recipe on here… It’s delicious!) but I love making the sides and the dessert.

Making the filling is both fast and easy! You simply want to combine all the ingredients in a large bowl and then mix them together.

How to Make the No-Bake Crust?

Combine all the ingredients together and mix! Easy as that.

I recommend you really get into the mixture either with a spoon or your hands to ensure the crumble is entirely coated in the butter and somewhat damp.

Then you’ll poor your no-bake crust into a tart pan and press it firmly down so that it forms the shape of the tart pan. Then place it in the fridge.

How Long Does it Take to Make?

Not long at all!

The filling mixture takes only about 5 minutes to get all the ingredients ready and set, and really only 5 to whip together.

The pie crust takes only about 5 minutes to make as well.

The only time-consuming part about making this tart is pressing the tart into it’s mold, and the cooling process.

Is there a way to make this tart vegan and vegetarian-friendly?

Absolutely!

You’ll need to substitute the:

Butter
Cream cheese
Yogurt
Sugar

To ensure your recipe is vegan, you’ll want to get vegan versions of these ingredients.

Thankfully, there are plenty of alternatives now so you likely won’t have any problem finding vegan and vegetarian options.

For example, you can substitute both the cream-cheese and yogurt ingredients with Daiya Greek Yogurt Alternative, or if you’d still like the creaminess of cream-cheese then you can try their Cream-Cheeze spread. Tart Crust Directions:

Let’s begin by making our tart crust!

  1. First, you’ll want to pour your bread crumbs, cinnamon, and brown sugar into a medium-large size bowl.
  2. Mix the ingredients together well.
  3. Then, pour in your melted butter.
  4. Mix very well until all the dry ingredients have been dampened by the butter. You may find you need to use your hands to ensure all the breadcrumbs are lightly coated in the butter.
  5. When your crust mixture is ready, pour it into your tart plate or pan.
  6. Begin to press the crust down and around the size to mimic the tart plates shape. You'll want to really press the crust down so there are no loose crumbs.
  7. Once done, place your crust into the fridge and begin making your filling.

  1. Begin by adding pumpkin puree, brown sugar, and pumpkin pie into a large bowl.
  2. Using your mixing spoon or hand-mixer, begin to mix together. Mix until smooth.
