This Braided Blueberry Cheese Keto Danish recipe has golden brown dough, a ton of cream cheese filling, and blueberries that pop with every bite. It is a home run. It's perfect for a morning snack or a great addition to brunch.

If you didn't know already, brunch is my favorite meal. I'm not a big eater first thing in the morning, so I love it when I can just sip coffee until 10 or 11 on the weekends and then sit down to a full spread. My cream cheese egg bake, bacon or Taylor ham, fresh fruit, and some kind of pastry are always on the brunch menu.

Danish pastries are perfect for breakfast or brunch, making them one of my top contenders to whip up when I have the time. I love this keto version because I don't have to feel guilty or reluctant to eat it with my morning coffee. And if I do say so myself, it's better than anything I can buy at the coffee shop. This is one of those keto recipes that show why the keto diet is so doable and simple to stick with.

I've been craving another sweet cheese danish since I made my Raspberry Cream Cheese Danishes back in March. I made a plain keto cream cheese danish while visiting family for Easter as well. But it can be time-consuming to make individual danishes. I thought it would be easier to make one big one and then just cut it into pieces.

If this is your first time making this amazing recipe, you're going to love the flaky crust and blueberry flavor. It really is one of my favorite treats.

This keto pastry recipe is low-carb diet, ketogenic diet, gluten-free, grain-free, sugar-free, and Trim Healthy Mama friendly.

Ingredients

Mozzarella - Any shredded mozzarella blend will work.

Cream cheese - This is what gives the cream texture in the middle of the pastry and also helps to keep the dough from drying out.

Almond flour - Used to create the dough.

Coconut flour - Helps to create the keto dough and also adds a hint of coconut flavoring.

Ground golden flax - A great way to add fiber and helps with the golden coloring.

Joy Filled Eats Sweetener - My go-to sweetener for all my baking needs.

Egg - The binding agent for the dough.

Vanilla extract - Adds vanilla flavoring to the filling of the pastry.

Frozen blueberries - Used in the middle of the danish.

How To Make Keto Danish

If you've ever made a low-carb pizza with fathead dough, you can make this danish. It is about the same difficulty. You make the dough (I prefer to mix it in a food processor), top it with a cheesecake-like mixture, sprinkle on some blueberries, fold over the strips of dough, and bake.

Step One: Preheat the oven to 350 degrees.

Step Two: Put the cheese in a microwave-safe bowl and heat for 1 minute. Stir, then heat for 30 seconds. Stir. The cheese should be melted now, but if not, heat for 30 seconds again. Add all of the other dough ingredients and the cheese to a food processor. Mix using the dough blade until it is uniform in color. Once mixed, wet your hands and press the dough into a 9X12-inch baking sheet that is lined with parchment paper. Spread it out so that it covers the baking sheet.

Step Three: To make the cream cheese filling, add the cream cheese, vanilla, sweetener, and egg to the food processor and mix until combined.

Step Four: Add the cream cheese mixture to the middle of the pastry dough.

Step Five: Sprinkle the blueberries on top of that.

Step Six: Take a sharp knife and cut one-inch slices down the edges of the dough. Criss-cross the cut dough and braid as you go.

Step Seven: Put the braided pastry into the oven and bake for 40-45 minutes. The dough should be golden brown, and the filling should no longer be jiggly once done.

Expert Tip: Instead of the glaze brush with an egg wash before baking. Just mix an egg yolk with a teaspoon of water and brush it on.

Step Eight: This step is optional, but you can make the homemade glaze by combining the sweetener, butter, and vanilla in a small bowl. Add the mixture to a piping bag and drizzle across, or just use a spatula and add it on and spread it out.

Storage: This is best served fresh but store any leftovers in an airtight container in the fridge. Warm up to soften the pastry before enjoying.

Variations

Add nuts - You can add a bit of a crunch to the top of this danish by adding crushed peanuts, walnuts, or pecans.

Change the shape of the dough -If you don't want to braid the dough, you can make different shapes or looks. My Pecan Danish shows other fun ideas and options!

Add a different filling - If you don't want to use a fruit filling, you can easily just use a cream cheese filling for this treat.

Common Questions

What is Mozzarella Dough?

The 'fat head dough' is a mozzarella and cream cheese-based dough that works equally well in sweet and savory applications in place of puff pastry or pizza dough. In my sweet uses of it, I add a little vanilla and sweetener.

You cannot taste the cheese. As long as you mix it into the dough thoroughly, you absolutely cannot tell the dough is mostly mozzarella cheese. I promise. Just follow the recipe card, and you'll be just fine.

Can I make the dough by hand?

If you don't have a food processor, you can use a wooden spoon and a bowl to mix the dough for the danish pastry. It will just take a bit more time, but it's doable to do.

How do I Braid a Large Danish?

As the photos show, simply form the dough into a large oval. Put the filling down the center and cut one-inch strips along the sides. Fold them over the filling. My braid opened up a bit while baking, but I still think it looked pretty enough for company, and it was definitely tasty enough.

It's so delicious and simple to do, which is why it's one of my favorite doughs.

How do I make a Keto Glaze?

This glaze is optional but is a nice touch to the finished Danish. All I did was mix a little melted butter with powdered sweetener and vanilla and drizzle it on top while the Danish was still warm. You could also use a good jam for this keto cheese danish. Totally up to you.

Can I use a different low carb sweetener to make the glaze?

I love using my own sweetener for this treat, but you have options when it comes to variety. I give suggestions in the recipe card for using an erythritol sweetener, monk fruit sweetener, or others.

The glaze is optional but does add sweetness to the pastry. If you don't want to waste the glaze, let the pastry cool down a bit before adding the glaze to the top. This will help it stick better and not melt off.

Can I use fresh blueberries instead of frozen ones?

I prefer using frozen blueberries because they hold their shape better, but if you want to use fresh blueberries, just fold them in carefully if you add them. They may end up changing the coloring of the keto dough because of the juice that comes out, but the flavor will still be there!

Ingredients

Dough Ingredients:

Cream Cheese Filling:

  • 8 oz cream cheese softened
  • 1 teaspoon vanilla
  • 1 egg
  • ¼ cup Joy Filled Eats Sweetener (or see alternativesin recipe notes)
  • ¾ cup fresh or frozen blueberries do not thaw if using frozen

Instructions

  • Preheat the oven to 350.

  • Put cheese in a microwave-safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point, all the cheese should be melted. Microwave for 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point). Add the rest of the dough ingredients and the cheese to a food processor. Mix using the dough blade until a uniform color. If you do not have a food processor you can mix in a medium bowl with a wooden spoon but you may need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients.

  • Once the dough is a uniform color wet your hands and press it out into a 9×12 ish rectangle on a parchment-lined baking sheet.

  • To make the cream cheese filling you can add the cream cheese, vanilla, egg, and sweetener to the food processor (no need to wash) or to the bowl you were using. Mix until smooth in the food processor or with an electric mixer.

  • Put the filling down the center of the dough. Mine was spreading out a bit so I just pushed it back to the middle with a rubber spatula. Sprinkle the blueberries on top. Cut one-inch strips down the edges of the dough as shown in the photo. Crisscross one over the other, braiding as you go down. Bake for 40-45 min until the dough is golden and the cheese filling no longer jiggles.

  • Optional glaze: Mix 1 tablespoon of softened butter with 1 tablespoon of finely ground sweetener and ¼ teaspoon vanilla. Put in a piping bag and drizzle over the top of the warm pastry (or just spread on top). It will melt and make a shiny glaze. This only makes a small amount of icing. If you would like more you can double or triple it. If you don't want the icing to melt cool the danish to room temperature before adding the icing.

Notes

Notes on Sweeteners:

I use my ownblend of xylitol, erythritol, and steviain my recipes. This is twice as sweet as sugar. It is comparable toTrim Healthy Mama Gentle SweetandTruvia.

To sub inSwerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for.

To sub inPyureorTrim Healthy Mama Super Sweetuse half the amount of sweetener called for.

Substitutions will work in most recipes. They may not work in candies, such as caramel.
